White Chocolate Key Lime Pie

One of my very, very successful Pinterest projects is the scrumptious White Chocolate Key Lime Pie.  I had to adapt it as the recipe is from America, so the base was made from some American biscuit and the recipe was all in cups and ounces.  So here is my Australian/English one :)IMG_1189

White Chocolate Key Lim Pie


McVitie’s Digestive biscuits (about ¾ of a packet)

2-3 tablespoons of sugar ( more if you like it sweet)

200ml  melted butter


Crumb biscuits and mix in sugar and melted butter.  Press evenly onto the bottom and up the sides of a pie dish.  Refrigerate for 30 minutes before filling.


250ml of cream

300g white chocolate

1 tablespoon sour cream

50ml lime juice

Melt together cream and chocolate in a small saucepan set over a low heat.  Remove from heat, stir in sour cream and lime juice.  Pour onto pie crust. Cover with plastic wrap and refrigerate for 8 hours or overnight.

You can freeze for later use.
